I was supposed to write this blog post last night but things don't always work out as planned. We're on vacation at the cottage and with the wonderful rain and wind storm we had yesterday we lost power. Thankfully it was only for a few hours and most of that time we were at the movies in town. Our awesome neighbour Helene, called us to warn us there was no power, so we picked up supper on the way back and ate by candlelight until the power came back on. Once the kids were tucked in bed, it was very late and I was no longer in the mood to write.
Sooooo...I've made my Triple chocolate chip cookies aka "brown" chocolate chip cookies at least a dozen times since posting it earlier this year but I have never made "blond" chocolate chip cookies. With the help of my princess we made the most wickedly deliciously decadent "blond" chocolate chip cookies...OH MY GOD!
They are super easy and super quick and you don't need any power tools to make them. A little elbow grease and some love and presto!
- 2 & 1/4 cups of flour
- 1 tsp. of baking soda
- 1 tsp. of salt
Combine the above in a bowl with a fork or a whisk.
In another bowl combine the following using a wooden spoon.
- 1 cup of melted butter **ok 1 power tool ...microwave
- 1/2 cup of sugar
- 1/2 cup od brown sugar
- 1 tsp. of vanilla extract
- 2 eggs
NOTE: I used 3/4 cup of each white & brown sugar and although it is insanely delicious...it may be too sweet for some...1/2 a cup of each should be more than enough.
Once the wet ingredients have been completely combined, add the flour mix a bit at a time.
Finally add 2 cups of chocolate chip cookies. If you'd like you can also add 1/2 cup of crushed nuts (pecansor walnuts). **I did not add nuts for allergy reasons
Scoop teaspoonfuls of the mixture onto an ungreased baking sheet and bake in a 400 degree oven until golden brown (approximately 8-10 minutes. Yields 52 cookies. Done in less than 30 minutes.
MORAL of this story: baking cookies with your children can turn a gloomy day into a yummy day
