Apple cranberry oatmeal sour cream muffins ...breakfast in a bite

For those of you who follow me on FB, you know that this is Apple week. My challenge is to create at least 5 different apple recipes in an effort to use up all the apples I have from our recent trips to the local apple orchards. Follow me this week while I tantalize your taste buds with awesome AND easy recipes.

The following is the perfect recipe for a snack or breakfast on the go. It is just deeeelicious!

Apple cranberry oatmeal sour cream muffins

Makes a dozen moist flavorful muffins in less than an hour

Ingredients

  • 1 cup of oats
  • 3/4 cup of sour cream
  • 1/4 cup of apple sauce
  • 1/3 cup of melted butter
  • 1 cup of brown sugar
  • 1 cup of flour
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/8 tsp of cloves
  • 1/2 tsp of salt
  • 2 eggs
  • 1 tsp of vanilla
  • 2 small apples or 1 medium diced
  • 1/2 cup of cranberries

HOW TO

  • Preheat the oven to 375 degrees
  • In one bowl mix the oats, sour cream and apple sauce; set aside
  • In another bowl beat the eggs and vanilla until well blended; set aside
  • In a third bowl, combine the flour, brown sugar, baking powder, baking soda, salt, cinnamon, cloves and butter
  • Combine all three bowls and add the apples and cranberries
  • Evenly distributethe mix in a lined muffin tin
  • Bake for 18 to 20 minutes
