For those of you who follow me on FB, you know that this is Apple week. My challenge is to create at least 5 different apple recipes in an effort to use up all the apples I have from our recent trips to the local apple orchards. Follow me this week while I tantalize your taste buds with awesome AND easy recipes.
The following is the perfect recipe for a snack or breakfast on the go. It is just deeeelicious!
Apple cranberry oatmeal sour cream muffins
Makes a dozen moist flavorful muffins in less than an hour
Ingredients
- 1 cup of oats
- 3/4 cup of sour cream
- 1/4 cup of apple sauce
- 1/3 cup of melted butter
- 1 cup of brown sugar
- 1 cup of flour
- 1 tsp of baking powder
- 1/4 tsp of baking soda
- 1 tsp of cinnamon
- 1/8 tsp of cloves
- 1/2 tsp of salt
- 2 eggs
- 1 tsp of vanilla
- 2 small apples or 1 medium diced
- 1/2 cup of cranberries
HOW TO
- Preheat the oven to 375 degrees
- In one bowl mix the oats, sour cream and apple sauce; set aside
- In another bowl beat the eggs and vanilla until well blended; set aside
- In a third bowl, combine the flour, brown sugar, baking powder, baking soda, salt, cinnamon, cloves and butter
- Combine all three bowls and add the apples and cranberries
- Evenly distributethe mix in a lined muffin tin
- Bake for 18 to 20 minutes
