I LOVE banana bread! I love it even more when it's crunchy and chocolaty.
When I see bananas languishing on the counter, mournfully staring at us, begging us to stop averting our gaze in favor of a brighter firmer fruit, I smile. I know those bananas are going to be perfect for some banana bread. That is, of course, I don't let my guard down; my hubby is always trolling around itching to throw them out! Yucky ripe is what I am aiming for ...the riper...the better..the sweeter.
With dark ripe bananas you also need a lot less sugar to get a sweet flavor-packed bread. The following is a recipe that combines my favorite ingredients: maple syrup, pecans and chocolate chips. It's quick to make, the house smells AMAZING and the bread is simply delicious!
INGREDIENTS
- 4 super ripe bananas, mashed
- 1/2 cup of sugar
- 1/2 up of maple syrup
- 1/2 cup of melted butter
- a pinch of salt
- 1 generous tsp. of vanilla (I never measure)
- 1 &1/2 cups of flour
- 1/2 cup of pecans
- 1/2 cup of chocolate chips
Blend the first 6 ingredients well then add the flour half a cup at a time blending in between each scoop. Mix in the chocolate chips and the pecans. Pour into a bread mold and into the oven at 350 degrees for approximately 50 minutes/
